Gluten-free Dairy-free Cinnamon Raisin Bread

Today, I did an experiment and tried to make Gluten-free Cinnamon Raisin Bread. It came out pretty well! Here's what I did:

Gluten-free Cinnamon Raisin Bread
1.5 C rice milk
1/4 C canola oil
3 eggs (or egg replacer)
1/2 teaspoon vanilla extract
1/4 C tapioca flour
1/2 C potato starch
2 C brown rice flour
1/2 C sorghum flour
1/2 teaspoon cinnamon
1/4 cup sucanat (or sugar)
1/4 cup raisins
1 T xanthan gum
1 t salt
2 t yeast

I can't remember which setting I use - the one that take 2:40.

Next time, I'll use more raisins and experiment with adding them later in the cycle. Also, I'll use more cinnamon and leave the bread in the machine a little longer (if I can resist!). The sorghum flour gives it a softer texture, but the bread loaf sort of leans when you take it out :)

Sounds delicious. I haven't yet made cinnamon raisin bread so I'll have to give this a try.

Wow, that sounds good. I like raisin bread and have not had it in some time. Might have to get baking!

Sounds great! I don't do raisins, but I love cinnamon bread. This looks like a good recipe to try. Maybe I'll try a different dried fruit - dates?

Arrowhead Mills does clean their lines, but they are not dedicated. I have had trouble with some of their gf products so I shy away from them. I'm glad you mentioned milling your own, though. That's a great idea. Do you buy buckwheat from a health food store?

Linda, I'm part of a buying club through UNFI: http://www.unfi.com It allows me to buy the Ener-G flours & Bob's Red Mill flours in bulk, as well as buckwheat, beans, seeds & nuts etc. Not everything is made in a dedicated facility, but they label it well in the catalog.
