I was inspired by Heather Eats Almond Butter to create a protein ice cream today. Bear keeps asking for ice cream for breakfast (I think this library book is to blame), so it'd be great to create something that is healthy and protein-packed.
Apple Cinnamon Ice Cream
1 cup milk (I used raw pumpkin seed)
1/2 cup unsweetened apple sauce
1/2 teaspoon cinnamon
1/4 teaspoon guar gum
1/4 teaspoon xanthan gum
1 tablespoon Brown Rice Protein Powder
4 drops Vanilla Creme Liquid Stevia
Blend it in your Blendtec and then pop it in the ice cream maker for 10-20 minutes. Yum!
